Turkey breast is soft and delicious. We bake it to make it even more flavourful and ready for eating on its own or as an ingredient in light, tempting recipes.
You can make so many recipes with turkey breast! Here are some very simple ones.
Turkey rolls: take the slices of turkey and fill them with soft fresh cheese mixed with pepper, fresh chopped mint, extra virgin olive oil and lemon juice.
Another version: wrap the slices of turkey around grilled strips of courgettes, or asparagus, and then serve them with a little tomato salad.
Thick cut and diced, turkey breast is perfect for adding flavour to summer salads, for example with feta, baby tomatoes and olives, or for cooking a savoury tart with spinach and eggs.
Which cheese goes well with turkey? Fresh, light cheeses, such as feta, ricotta, squacquerone, or mozzarella.
And which vegetables? It’s best with typical summer vegetables: asparagus, courgettes or tomatoes.
The meat is salted and then massaged to help it absorb the salt. Next it is sprinkled with a mix of pepper, rosemary and garlic. It is then bound to keep the meat compact. Now it’s time for cooking, which forms that typical porchetta rind.
You can eat it sliced in a sandwich, you can heat it up in a toastie or a flatbread as a more flavourful alternative to the classic cooked ham, or you can cook it in thick slices and serve it like a steak.
We all have our own recipe for a porchetta sandwich. In our opinion, it goes perfectly with provola cheese and thinly spread mustard, but some people put grilled vegetables into their sandwich (courgettes, peppers, or even potatoes).
It’s incredibly delicious with onion marmalade, which you can find pre-made in jars, or you can make a version at home in a few minutes by cooking sliced onions in a saucepan with a drizzle of extra virgin olive oil, some pepper and a drop of balsamic vinegar, until they turn nice and soft.
Mayonnaise, mustard or barbecue: all these are recommended, but try them all to find your favourite.
Porchetta goes with grilled vegetables – mainly peppers and courgettes – and with roast potatoes. It’s excellent with chicory cooked in a pan with garlic.
It can be served with a full-bodied red wine like Chianti, Barbera or Nero d’Avola.
Mayonnaise is the classic choice. Béarnaise or tartar sauce would definitely be more original and delicious, while if you love ethnic flavours, you’ll go crazy for tzatziki sauce. It’s also great with tonnato sauce.
The nutritional values of turkey breast are very interesting: 100 g contain 2.8 g of fat and provide 125 kcal.
Yes, because it’s a cooked meat, so there’s no risk of toxoplasmosis. But eat it in moderation, because its nutritional content is quite high.
They’re both light, with similar nutritional values. On average, 100 g of chicken provide 110 kcal, while the same quantity of turkey has 125.
